On grilled steak I usually just go with salt, black pepper, garlic, and maybe paprika and herbs, though.

I can never understand western cooking. You have the time to cook something for 5 hours in the oven. That steak in the OP can feed a whole Malaysian family for a week. We cut it into thin slices and use them in stir frys and curries.
