There are 3 major differences
1- Döner is thinner. Döner is originally called here "Yaprak Döner" Yaprak means Leaf because it's as thin as a leaf. Gyros is thicker.
2- Gyros is made of pork. Döner is either made of chicken or just other meat.
3- Döner was invented by Turks. Greeks adopted it
