Can I naturally have conversation with a native Japanese if I pass N1? I heard that N1 is just the minimum condition and with it one can't even understand an ojisan's common conversation properly. Is that true?

N2 is supposedly business-level. Natives, including ojisans, don't speak Japanese exactly as it is explained in the text book for the Japanese language test, but if you have enough knowledge to pass N2, you'd probably understand 70-80% of ojisan's common conversation.
I haven't learnt neither French nor Japanese yet but from my experience of learning English, my recommendation is that you learn French first and then move on to Japanese. Japanese might have at best few things in common with your mother language which might be either English or Hindi or both so it would be extremely strenuous and frustrating to learn an absolutely new language from its script to totally different grammar rules from yours. I've struggled for over 4 years to be this good at English but still I can't even say by any means my English is above an intermediate level. If I had started to learn Japanese instead of English, I would've been pretty fluent in it by now. So you don't have to go through a way harder one. Just kick it off with easier one and then move on to a harder one. Also by learning French, you would pick up some know-hows and tips about learning a foreign language on which you can capitalise to learn Japanese.

Ojisans usually use difficult 終助詞 and abbreviation expression don't they? There are lots of test workbook but I think there's almost no learning material dealing with 終助詞 and abbreviation in detail. Can I acquire them naturally if I keep studying workbooks?

Looks like an Utsubo, a kind of sea creature. They say Utsubo are delicious. I've never tried them.
Use of informal 終助詞 and abbreviated expressions are not limited to ojisans, though. Each generation has its own ways of speaking, and they are sometimes hard for people from other generations and even harder for those who are non-native speakers. They cannot be learnt from text books, and I guess this applies to any language.

Let me be frank with my frog friend. If you want to learn japanese in a reasonable amount of time you'll need to work your ass off.I've been studying if every single day for 3 hours for 2 years and only now I'm able to understand most of the dialogues. Even then it is a very rewarding language in music, literature, pop culture and every other aspect. If you really want to learn it you must be invested, don't become one of those memes who spend 5years to learn it.
you always have a choice of quitting. learning languages is time consuming but it is not always rewarding enough for the amount of time and money you invest.
