You should start with Akira Kurosawa for Japan, early Jackie Chan for China, and Wong Kar-Wei for Hong Kong. Chan-wook Park for Korea.

All good. The Japanese stuff is a bit goofy until around the 90s or so. I remember taking a bit to get into Kurosawa, since 7 Samurai stuck me as incredibly overrated and not worth the three hour, thirty minute run-time.

Sanshiro Sugata has a similar feel to the Karate Kid, and that's where I got into him with.

If you're into the animated works, Satoshi Kon actually makes a mean thriller, but there's a whole lot of culture shock in Perfect Blue. It's excellent and uses the medium wonderfully, but the culture shock is rough.
