It improved Darth Vader. In Legends he was slow and weakass. The new canon has made Vader as physically capable as he was before his prosthesis and rightfully far more powerful given he's a construct of the force. It's possibly debatable now that he is/was one of the most powerful Sith Lords and force weilders to have ever lived.
But yeah. To anyone who isn't a main film protagonist or Darth Sidious, he's an unstoppable nightmare. There is no chance of victory against him.

Oh yeah. He's still heavy as fuck. But you also have to take into account his own natural parts compensating, and boosts from the force (not unlike how he did before the prostheses).

Not anymore. All of it connects directly to his nervous system. Once the helmet goes on and completes the connection, the suit, the prosthetics feel as much apart of him as his own organic parts. Though out of the helmet, yes, he feels the nubs of his limbs and everything. And he uses that pain to feed his anger, that to fuel his hate, and all of that to deepen his connection to the force.

I highly recommend checking out Darth Vader and the Lost Command and Darth Vader and the Ghost Prison. I've yet to read the Ninth Assassin yet, but I'd imagine it's following the same principle.

That's really the best answer. Lucas never really considered the EU as being canonical but was content to let it fill in gaps he wasn't (yet) interested in filling with his own stories. That hardly means he didn't see certain merits or mind using certain elements here and there, but he was never going to let the EU stand in the way of telling the story the way he wanted to. He was a kind but stern father of Star Wars. Capable of patting his children on the head and showing them favor, but they still damn well did what he told them to.

At one point there were two separate Greedos. A clone (as in Jango clone) named Spar ended up becoming a living retcon, all to explain a variety of inconsistencies in Boba Fett's history- now a significant number of his appearances weren't actually Boba, they were Spar pretending to be Boba.
My absolute favorite though is Dooku's Force doppelganger, an explanation made to a fix a problem that didn't even exist. A video game lets you kill Dooku at the end, and rather than just say "well, it's a game, Dooku obviously didn't die there" they instead decide went with "dark side duplicate", which raises a shitload more questions and creates an even bigger conundrum than just saying "hey that didn't really happen."
