Kirby wanted hulk to look gray. A coloring error made him greenish so they keep it like that.

I was not aware of that, thanks.

I have to wonder if he would have become as famous as he is without the iconic green coloring.

I don't know much trivia about Hulk, but I have a few tidbits.

There's a long-standing urban legend that Stan Lee once forgot Bruce's name and wrote it as"David", and this was what lead to him being called David Banner on the TV show.

This isn't actually true, and was changed for several reasons, including the producer thinking it sounded too "comic book-y" (he really hated comics) and the network thinking it sounded like a gay name somehow.

Another thing was that, although the Hulk has always spoken in the comics and been moderately intelligent, the TV producer decided he shouldn't be able to talk.

Because of the show's popularity this became ingrained in the public consciousness and is why he only says a few words in all of his movie appearances so far.
