He sees an old man that Mace is trying to kill without a proper trial. Anakin even begs Mace to let Palpatine go to trial, but Mace says no that they need to kill him.

In that moment by saying that Palpatine must die without a trial, Mace sealed the fate of the Jedi. Palpatine manipulated every action Mace made. By refusing to allow Palpatine the trial, he proved Palpatine right in Anakin's eyes. The Jedi are corrupt and Mace cemented Anakin's turn to the dark side. All it took was Palpatine throwing the fight and Mace did the rest

That is what happened. Mace didn't "easily" defeat Palpatine. Palpatine played Mace like a fool and sealed Anakin as his Apprentice in one calculated action. Palpatine stopped trying after he killed 3 Jedi masters with one to two blows. He willingly lost to Mace for the reasons I said above.

anyways, Windu uses a special dueling style that utilized the Dark Side. Sheev is only powerful because he has a greater share of the Dark Side of the Force than Jedi's have a share of the Light Side of the Force. Since Windu utilizes the dark side, Sheev DOES NOT have the advantage against him like he does other Jedi.

PLUS. Windu's special snowflake power is to use his opponents strengths against them. Which is why we see him redirecting Sheev's lighting back at Sheev. Basically Sheev had no way of beating Windu even though Sheev was technically more powerful.

I've always interpreted this scene as Windu kicking Sheev's ass legitimately. It's heavily implied by Dooku in Episode II that Windu is the most powerful of the Jedi, and in Episode III Anakin says that Obi-Wan is as wise as Yoda and as powerful as Windu - implying that Windu is the standard to measure against.

The other thing is that Sheev's master plans don't always have one perfect result that will be achieved and work out for him. Rather, he employs tactics that can result in many different outcomes, but he can make any of those outcomes work to his advantage. Like when he tries to turn Luke. He doesn't foresee whether Luke will join him or not. He foresees that there will be a fight between father and son, and whatever the result is he will wind up with a powerful servant. It's the same deal with Windu. Once the fight begins, he knows that either Anakin will come and save him, becoming his servant, or Windu will defeat and arrest him, and Anakin will see that the Jedi Order have turned on the Senate and become his servant anyway.

Remember, Windu only tries to execute Sheev after Anakin arrives and Sheev puts that extra phase into motion. Before that, Windu was telling Sheev that he was simply under arrest and that "The Senate will decide your fate".

The idea of Sheev throwing the fight before Anakin even enters the building implies that he is somehow able to know that Anakin will run to Windu, get told to stay behind, stew for exactly the appropriate amount of time, get impatient at just the right moment and then arrive just as he is being disarmed - and that's not how the Force works. At least, not in any of the other situations we've ever seen in the films.
It's far more reasonable (and the way I've always interpreted the events) that Sheev didn't know whether Anakin would run to Windu or not, but could foresee that in any possible outcome, he would be able to swing it to his advantage.
