Transformers have a "spark" which is basically their heart, their brain and their soul in one. As long as the spark is intact they can be repaired. Sparks can sometimes even be removed entirely and put into a different body. Optimus ripped out the guy's spark and destroyed it, which is the surest way to permanently kill a Transformer.
