Somehow I doubt we're gonna see much of the Mandalorians in the ST, but that would be pretty cool to see. I'd more expect them to be on the First Order's side though, given that they're the ones inciting war by blowing shit up and war is what they're all about, but who knows. I suppose there could be some on either side, like different houses/clans aligning with each faction and fighting one another.

Those seem to be "boring times" to a lot of people. There's no full-scale war happening between TPM and AOTC. It would require humanizing more of the Jedi Order and show them slipping to the point they get to in ROTS.
ESB to ROTJ as well. The Vader comic people don't even want to do a sequel of the comic once it's over of Vader between those movies. All we know is that the second Death Star begins to be built, if it's not already, and that the Rebellion is in full chaos. That's not really much to cover a few good stories, imo.
It's also possible that whatever happened between those two movies has no impact on what's coming out in the future, so there's no reason to visit the time periods.

I don't. The First Order wants to recreate the Empire, or something like it. The Empire subjugated Mandalore. Probably kept them from 'Muh Warrior culture' just as much as Satine regime did. Mandalore is all for waging war. But I think they'd consider who they would fight with over just fighting for the fuck of it. Siding with the FO will lead to shit like how it was with the Empire, or worse. Siding with the Republic at least presents a chance to retain their independence and cultural identity.

While that may be the case, we saw from the season 3 trailer that there are Mandalorians who serve the Empire. At present it's unclear how many, if any, do so willingly, and that could affect whether any of them would support/fight for the FO.
Plus, not all Mandalorians value the same things; there could be a variety of reasons they'd support a group like the FO. Things like money or resources could play into it, but also the fact that they pretty much annihilated the entire Republic fleet, so it's fair to say that despite losing Starkiller Base, they could still be considered the winning side. Some clans or houses might find it wiser to side with them as a result of that, simply for the sake of survival. Others who value that warrior culture much more would probably go with the Resistance and try to protect it.

The Emperor obviously prefers Vader outside of their usual structure to scare the shit out of people. We've most commonly seen him as a problem solver, sent to Lothal to deal with their rebel problems, sent to the Death Star II to get production back on schedule. Arguably sent to deal with the missing DS plans and later sent to capture Luke for the Empire.
It helps when he wanders about the Empire openly murdering people with magic when they fuck with him.

Task Force 99 is an atypical unit within the Imperial military. They don't act like regular Stormtroopers and obviously aren't bound by the rules against personalization of armor, allowing them to carry gear that fits their unique specializations.
A sergeant is certainly capable as a squad leader, and they seem to feel he's proven himself enough elsewhere. We HAVE seen Stormtrooper commanders (Grand Inky had one with him when he visited Fort Anaxes) but usually it's officers in cloth uniforms like Taskmaster Grint and Commandant Aresko or Supply Mater Lyste. Or, sure, Agent Kallus.
My standard rule of thumb for any Imperial officer who prefers cloth uniforms to armor is that they're all Niedermeyer from Animal House. Arrogant, blustering, convinced they are right, and almost certainly doomed to being fragged by their own troops if they aren't choked out by Vader.

At the moment, I don't see it that way. Yes, the republic lost it's fleet. though that doesn't necessarily mean they've lost all manner of their defenses. It's fairly likely that they can pool together militias from individual worlds, which could potentially rival or exceed the FO in man power given that we don't know how many of them there are. What I'm trying to get at is that yes, both sides lost their biggest guns (though the FO's was bigger), and now, I think, the field between the two is pretty level. It's going to be an actual war as opposed to the guerrilla shit the Rebellion was pulling with the Empire. Given that, and yes, you make good points on that there probably are some who'd side with the FO, it would still probably be more likely that they'd side with the Republic (mostly).
Though it could be cool if there were some who'd go and side with the FO in spite of the majority allying with the Republic. But I doubt the filmmakers would give us something that potentially awesome.

Well I wouldn't argue that he does what the Jedi were meant to do based on Yoda claiming they had fallen from their path during the war.
Vader's role is very much what he did during the war even though he's not a general anymore. He still leads men into combat when needed and problem solves on his own ass required.
Yoda would argue that leading men into battle isn't what the Jedi do. Qui-Gon on Naboo merely facilitated and was otherwise content to let the Queen and Gungans figure out their own path, which arguably has more meaning than a mystical monk just solving all your problems for you. They needed mutual peace, arrived at by their own wishes on their own terms. Any peace secured by the will of the Jedi would be far more fragile. Also like Obi-Wan's solution to the problem in the Obi-Wan and Anakin comic. He solved it by summoning in the Republic. The Republic will aid both sides and try to get them to agree to something in terms of mutual benefit so they can rejoin the larger galaxy.
