Well, the original Jesus was probably very similar to contemporary Semitic people, with rather dark skin, dark hair and beard. On the other hand, mind that Flavius was born in the year 30-something AD, so his description of Jesus was based on local narrations heard decades after Jesus' death and those tiny details about the nose, eyebrows etc. rather fit popular imagination at that time than the real picture.
Also - unlike the Orthodox church, the Catholic church doesn't care about the form (the Orthodox paintings tend to stick to quite strictly prescribed forms), the main idea is that the Gospel is relevant for all people and this idea is propagated in visual art by creating various depictions of Jesus, Mery, etc. You can find Black Madonnas, White Madonnas, Asian Madonnas etc.

That's another possible interpretation. In fact, this description you posted is quite "unfavorable", so there is clearly some influence of anti-Christian Jewish narrations. Still, it's very tame if you compare it to Talmud. On the other hand, Flavius could be also interested in pleasing the Romans, if I remember correctly, before gaining Roman citizenship he was involved in the uprising. I'm not sure which factor is more important in this case. Probably both play their respective roles.

The Romans shaved their faces, so a Roman could paint Jesus as a shaved person. A talented black Christian slave or libertus could paint him as a black person. As for the real depiction, it's impossible to verify. Things like this "3D reconstruction" cannot be taken seriously since we simply lack any data:

The only white nationalities in contact with the Mediterranean region at the time were Roman and Greek. Some people believe that a Roman soldier could be the biological father. So he would have to be mixed. Perhaps this would explain why his religion embrace every race. And every one depict him in so many ways.
