The golden age of music was the immediate rebellion against Classical forms which arose from analysing the best Baroque music. Think Beethoven's third, eroica, as the absolute best example.

Increased instability isn't necessarily deliberate, although in some cases it is. A lot of it is just the result of a more complex society, in a way it's reality's mechanism of incremental difficulty.
