good question. IMO nothing after rush hour (even if there are a few alright ones to watch), but if you're looking for underrated Chan flicks try Mr. Nice Guy. It has one of the best endings on film.
Last Jackie thread I read recommended Who Am I-- which is basically Chinese Jason Bourne-- for the rooftop scene, but I wasn't too impressed.

I guess the American version edited the flashback scenes from the ending around towards the beginning of the movie so there's no mystery why Jackie can't remember who he is

If you haven't seen police story yet, see that immediately before anything else.
The Lucky Stars trilogy was also really good. I thought the first one (winners and sinners) kinda dragged, but the second one (My Lucky Stars) was my favorite and the end fight scene was great.
Also a lot of Jackie Chan movies are easy to find on YouTube for free.
