They didnt, back when spain administered latam there were only 4 viceroyalties, Nueva Granada (colombia, venezuela and ecuador), Nueva Castilla (Peru, Bolivia and ecuador), La Plata (argentina, uruguay) and Nueva España (Mexico and centroamerica), the caribbean islands were not viceroyalties but provinces like modern day Canary Islands
