There hasn't been a modern war on an equal scale since. Which is good for everyone, but kind of boring for war movies.
It was a big war, with clear sides and battles all over the planet.
Personally I'd really like to see a fictional 15-minutes-in-the-future world war movie. Like the back story to the ghost in the shell universe. Where the world emerged from WWIII because of japanese nanomachines that clean up radiation, and the non nuclear world war that followed that.
Do it just far enough in the future that you can blur political lines and not hurt anyone's feelings, or a strangereal parallel.

WWII could be framed in a simple "good guys/bad guys" narrative because of Nazi Germany's fiery rhetoric about thousand year empires and the near total victory of one side over the other (even though it was actually way more complicated)
Most wars don't appear to have such clear cut narratives. They're about politics, diplomatic break down, trade, disputed territory or nebulous idealistic conflicts.
Most wars also don't end in a total victory scenario. They often end with unsatisfying compromises and slightly altered map lines.

Some wars are just better material for movies than others. WWII has a ton of huge battles to choose from. WWII battles had clear sides, and the battles were dynamic and hard hitting, unlike the static nature of most WWI battles.
If you want an example of a war that is not good material for movies, look at the Civil War or the Revolutionary War. The battles all took place out in empty fields and woods instead of tearing cities to the ground. Instead of intense bombardments and mechanized warfare, the men marched in formations and took turns shooting. What charges did occur were predictable and largely all looked the same to an observer. And both sides of those wars spoke the same language and were ethnically the same groups.
Wars more recent than WWII aren't as good for movies because the morality is either too muddy (Vietnam, any African conflict, the Balkans, Chechnya), or one side won way too quickly leaving little material behind to explore (Gulf war, Operation Just Cause, Falkland Islands).

Its also not as glorified, there aren't a lot of obvious heroics, just people getting slaughtered by technology on both sides. There was more to WWI than trench warfare, but that overshadows everything else.
