Plenty of reasons. One of the most important was to make Lithuanians, Belarussians and Ukrainians fear that Poles might want to take back their land, and to make Poles fear that Germans might want to take back theirs. Changing the borders in eastern Europe made quite a lot of people rely on Soviet Union as the force securing the peace.
Also - Germans had to pay for starting the war, and Soviets wanted to gain territory. Thus - Poland had to make a step to the west.

It's almost like the Poles never had any ambition about the Westward expansion of their borders, but those pesky Orthodox Russians forced you to accept all these free territories from your neighbours.

Back on topic, there were a lot of factors and the Pole who previously replied to the OP raised mostly valid points, but let's not forget that Poles never really inhabited their Eastern territories, definitely not as a majority.

The lands that were annexed from Poland by the Soviet Union at the end of WWII were taken from Russia in the 1920's as a buffer, rather than because of any nationalistic mumbo-jumbo justification.

Soviets got that light blue area after they invaded Poland in 1939.
Of course they wouldn't give it back, why would they?
However, Poles would be understandably salty about the whole thing so they got a piece of Germany as a compensation.
It was a pretty good move, since Germans were not in a position to protest. It also allowed Poles to take revenge on Germans by commiting an ethnic cleansing in their new areas, again directing vengeance away from Russians.
