Probably about a 70/30 ratio meat to fat give or take. That was a bunch of irregularly trimmed bellies I got from a friend who was moving out of state. Most of the time I try to cure leaner bellies when I can, but this time they were definitely fatter than usual.

Yessir, though I actually cure my own. I buy the Cryopacks of raw trimmed pork belly from Costco and then portion them out in 3-5lb slabs. Then cure and smoke them myself. Comes out better than any store bought bacon for sure.
