I find most kung fu films satisfying until the last 30 minutes or so, Chinese martial arts films almost always has this Japanese and/or Westerner villain at the end. Why can't they just beat each other instead of making a "China strong" statement at the end?

There aren't that many movies that do that. Chinese audiences prefered no westerners above western villains.
Having said that, the Once Upon a Time in China series is pretty good. That's one of those China pride movies.
