Because Adventure Time used to be good while Steven Universe always sucked.

Almost all of those games are good actually. Hell even the fan made game has turned into a pretty fun game.
And because the cost of making a video game (outside of indie shit on PC) has soared astronomically. When's the last time you saw a movie tie in game for fucks sake?
AA developers are basically non existent anymore. Gone are the days of every show and movie ever released getting its own video game.

Adventure Time has antagonists.

Short of simething like rhythm games or Gem Puzzle Mania or Stevens Sports Festival you can't really do games with SU.

Its not like any of the Adventure time games are canon so why would the SU games have to follow the canon exactly.
Also that quote about no antagonists is from Matt Burnett who has lied multiple times before and since.

Adventure Time at least has the first three seasons establish that the world is full of dungeons and villains

Still, SU isn't exactly the kind of show that glamorizes fighting and battle. It'd be out of place for a game to do it.

SU's entire first season consists of him fighting monsters of the week.

You could easily make a whole game of that, with maybe Jasper or Malachite as the final boss. Easy peezy.

You could go even further if you did a "play through the show's plot" sort of game. Then you could fight Lapis, Peridot, the Ruby Squad, and Bismuth, too.

That Steven Universe RPG on mobile is better than all the Adventure Time shovelware games, honestly. Just gimme a 3DS port of that RPG or some sort of sequel and I'll be happy.

That makes 0 sense, if you play through the plot would you also play through the 50 episodes where nothing happens at all in between fights? Or would the entire game be just 4 levels?

She'll be back. It's painfully obvious that the Bismuth episode was all just setting up a later arc.

But the show was doing the Jasper storyline when she first appeared, so they saved her for later.

Maybe when she gets back in 3 seasons you can make a game if she manages to stay alive longer than two episodes

You're missing the point. There's plenty of games where you can take a lawful good path and it's still a lot of fun.

Not to mention, tons of RPGs have the character who starts out as a villain, loses a fight and then ends up joining your party. That's all this would be.

The only SU game I know of is the phone one which is great, a fantastic little paper mario-style RPG that the show team clearly spent time on.

That's also how every shonen anime hero makes friends, as well as the plot to every superhero team-up. And there are plenty of fun games based on those sorts of properties.
