They didn’t change anything about Luke. He stopped being a badass by the end of Empire Strikes Back after his ass got handed to him and became a peace loving hippy to turn his dad.

Luke has always been the bravest boy in the Star Wars universe, dumb, whiny and rushed maybe, but he always did the most dangerous thing he could do despite people advising him against it.

So him just running away after the Knights of Ren debacle doesn't make sense, real Luke would have turned Kylo good or at least beat him, and then he would IMMEDIATELY attack Snoke and then either die or get captured.
That would have made way more sense, he's a man that went to fight the mob alone with his jedi powers to save his friends, and flied to confront Vader and the Emperor on their own ship by himself.

Running away is simply not Luke.

Luke is the definitive beta of film.

He wasn't the ultimate badass in ROTJ. He was more mature and there was a sign that he was willing to dabble in the dark side, but at the end he was begging for Vader to help him.
Luke is very human, and they made a point to show that all throughout the entire OT.

But that's intentional in-universe.
He's actively emulating Darth Vader in TFA, the whole movie is about how the First Order is trying to recapture the glory of the empire (which, again, makes sense since it's the remnants of the empire after RotJ).

So the main question is how will these character diverge from their Original Trilogy Counterparts since their backstories and personalities aren't exact copies of Luke's, Yoda's, Anakin's etc

You don't seem to understand those terms. A Mary Sue is an original character inserted into a universe, first and foremost, but along with everything else you assume "Mary Sue" means. In any case, that's not the case in Star Wars where every character had major character flaws, bungles, gets captured, loses 3/4 fights, etc.
