Can someone explain the canonicity of the Incredible Cross-Sections? Are they canon or are they Legends now?

They're not canon anymore (except the TFA one, I guess), though information from them is slowly being recanonized. I don't think they've released a new version of the old cross-sections books since the canon purge, like they did with Complete Locations.
...which by the way is still kind of unreliable, since it leaves in a lot of stuff that's explicitly wrong, such as the rows of offices behind the senate pods.

I think the current policy is that things like technical details, ship designations etc. are "canon until otherwise conflicted"
for example the HWK-290 appeared in some mobile game but wasn't named as such, so people asked and they said >"yeah it's the HWK, just assume the ship details are still what they used to be unless we change it"

For reference, there was also an earlier version of Complete Locations in 2005, the 2016 one is basically the same thing just with TFA stuff added.

Harmy uses multiple sources to despecialize the films. don't know all of them though, since I don't really care for the despecialized editions all that much

imperial ships were based on geometric shapes to make them look unnatural and therefore hostile. it does not resemble anything made on earth
the XYA were made to resemble conventional fighters in order to give them a sense of familiarity and comfort, the X-wing was explicitly based of the spitfire, the Y-wing doesnt have an inspiration listed but is assumed to be the P-38, the A-wing is not based on anything, but the central bubble cockpit, rear engines, and the A-shape giving the appearance of "wings" grounds it in reality
the TIE=Zero is actually from EU, where they are described as fragile, but with good turning

the ships in general are mixture of WW2 fighter planes and hot rods, with a touch of 70s era jets (the A-10 did not exist)
the X-wing is a space superiority fighter, like an F-22 or F-15, and possibly the P-51 or F-86 designed to shoot other fighters
the Y-wing is a strike fighter, it can dogfight just long enough to clear a path to bomb something the F/A-15 or the P-38 fit this role
the A-wing is an interceptor, it is supposed to engage bombers before they drop their payload, and the mig-21 Fishbed comes to mind

Black Series can be really hit or miss. Stormtrooper was one of their first sculpts in the line, so they hadn't quite gotten a handle on it (technically they released it as a Sandtrooper first and later made a clean version).

the Y-wing in the movies were fighter-bombers, with a Y-wing shooting down a TIE interceptor in RotJ, but the video games made them pure bombers to differentiate them
in X-wing TTG, they are only slightly less maneuverable than an X-wing, otherwise having very similar moves available, while in Armada, the Y-wing is just as fast as the X-wing, trading dogfighting for superior bombs
the X-wing can engage all targets even capital ships, but the movies, video games, and TTG show that fighter-to-fighter is their most glamorized role
the XYAB can all kill other ships in a dogfight, but they do it in different ways Dutch Vander was a Y-wing ace who focused solely on dogfighting
