Try 5 Card Draw and 7 Card Stud, Texas Hold 'em is the pleb version of poker.

In straight poker you have absolutely no knowledge of the opponents hand and can only really infer a small amount from betting, and even at that point it could be boiled down to statistics mostly due to the fact that there's no shared information.

The shared information in Texas Hold 'Em contributes immensely to the strategy of the game because you see people reacting over the betting stages and it allows you to infer much more specific information about their hand

In Straight Poker I can either think "This guy has a good hand" or "This guy has a bad hand". That's pretty much it.
In 5 Card Draw you can infer a bit more information based on the amount of cards being traded.

In Texas Hold 'Em many times you'll be able to infer very near to what the opponent either has or intends you to think he has. That makes the strategy deeper.

if you only know your 5 cards you only have to worry about what you have. the probability calculation is relatively simple

if you know what some but not all of the cards the opponent has (the shared cards) the probability calculation is more complex because there are less unknowns If the opponent is better at gauging the probability then he is going to beat you through skill

5 card stud or 5 card draw is easier than holdem since there are less unknown factors in holdem

It's not even just that, the betting pattern itself in Texas Hold Em gives so much more information because you have access to the same information which causes the change.
