Because using animated textures to remove wrinkles from an actor's face so they look like themselves, only younger, works better than using an entire 3D model to make one actor look like a different actor. What they did with Tarkin is the same thing they did for Clu in Tron: Legacy.

Gareth filmed a LOT of shit he knew would never be in the movie just because he thought it was interesting and wanted to see how it looked. A lot of random stuff that marketing later picked up on and ran for the trailers.

This all happened before cameras started rolling, so there likely isn’t any cut of the film with Jyn and Cassian flying out to safety.
Some of the reshoots appear to have made the film even darker. While Princess Leia’s cameo was always planned, Darth Vader’s film-stealing scene in which he butchered a slew of Rebel soldiers to try and recover the plans was one of the many scenes that was added as part of the reshoots. According to John Gilroy, the scene had been “conceptualized” late in the filming process, and required the production to bring in a new actor, Daniel Naprous, to play the iconic villain.

They do. Those rounded structures on Star Destroyers? Those are shield generators. The generators for the shield are on top of the bridge. That means the shields there are particularly powerful. Still we've seen the generators destroyed, and by small fighters too.
There was also an entire episode devoted to a bombing run of the bridge of the Malevolence, Grievous' super ship, to not only destroy it but to take out Grievous himself. Unfortunately the bridge was exceptionally well covered with turrets and they lost too many of their Y-Wing bombers so they had to switch targets to taking out the main weapon of the massive ship instead.

During Rogue One, the Mon Calamari ship Profundity had its command bridge located far below the hull. In turn, it also had massive shields.
Shielding such a relatively small area of the ship is much easier though, and although the TIE's focused fire on the bridge, nothing got through. That meant they could allocate less shield power to the heavy hull above.
