One I find neat is An AU where another character is the one to sacrifice their memories to defeat Bill. It could open up the possibility for a lot of potential character examination and interesting moments. Just for a few examples:
McGucket was the one who invented the memory gun, and it’s heavily implied seeing Bill was what inspired him to build it and eventually drive himself insane. Furthermore, he had only recently gotten his memories back by the time of Weirdmageddon, so him deciding to sacrifice his so nobody else has to could be interesting
The Northwests are implied to have made deals with Bill in the past, and Pacifica seems to want to fix her family name. Furthermore, the Northwests are a family of swindlers and scammers, so it could be interesting to see Pacifica use that for good.
Mabel could feel guilty for giving over the Rift that caused Weirdmageddon, believing it to be her fault. She could decide that since she had a hand in starting Weirdmageddon, she should have a hand in finishing it.
The whole AU idea just seems to be full of a lot of possibilities.

I despise those fucking AUs in which dipper is disabled, most of the times he's fucking blind or a trans bullshit. Also, mabel is always completely fine, what the hell in wrong with these people?

There was some creepy evidence (audio diaries and such) that the "sister" was into the "brother" and wanted to go as far as having a baby with him, but it was suggested to not be reciprocated because he had some misgivings about her.

I like the Gravity Faaf Alternate Universe where everything was mirrored upon itself.
The heroes were Pinip twins, Dippid and Mabam who lived with their Grunurg Stats who ran the Mysym Shahs along with Wenew and Sir Heyzueso Magnifico the Third.
They would go on adventures to thwart the schemes of villains like Biib and Gidig. I remember when Stats twin brother arrived, and his name was Foof.
It was a good AU.

I remember the time we all made our own. we had a whole list of bad end Dippers, an AU based around the idea of the Mystery Shack actually being a lunatic asylum and a separate slender-esque thing about Mabel having to collect floppy disks and tapes to find out what happened to the town.
