jack is still small time.

The show's art style and budget makes it hard to show blood smearing or mixing in with water. So they just draw it as large blobs and streaks which makes it look like a lot.

That it was only 20 minutes is one of the saving graces of the 22 minute television format.

1. The knife was still in when he was floating down the river so it wasn't actually that much blood coming out (a drop of blood in water looks like much more)
2. He had a few days to heal up and some wild game that gave him back some protien.
3. 70 years of training, he could fight while starving/sick/weak from blood loss and still be better than the average person.
4. He's fucking SAMURAI JACK

Also

a) The knife was left in the wound for a long time, preventing massive blood loss.

b) Jack is probably crazy healthy/strong, so his abdominal muscles helped him out

c) the location of the stab actually (assuming it didn't enter at a downward angle or toward the midline) don't have much in terms of major arteries. If he didn't perforate his bowel, he's fine long term too.

Just chalk it up to the art style. Realistically a knife wound wouldn't bleed very much as long as the knife stayed in. Which it did.

If he had actually been losing that much blood he would have bled out in an hour, just chalk it up to stylization. Honestly it bothers me too though.
