There was a lot of potential (a lot of shit too, but still) they could have taken from and what's more, they could have enticed people to read more books about said EU if they weren't familiar. Not enough people read anymore and the average intelligence is definitely suffering because of it.

Instead we get boring movies that are rehashes of the originals where people don't even pay attention because they're too invested in their phones/tablets. Absolutely awful, politically correct characters with absolutely no character whatsoever (apart from maybe Kylo).

Well, there are some good stories from the EU and Disney wants to eradicate everything that is not done by them (apart from the 6 movies).

Also, they actually steal stuff from the EU, therefore, you can't have both being canon. Like how Kylo Ren looks almost exactly like Revan. Or how Jyn Erso and the spic look like Jan Ors and Kyle Katarn. Disney is making a hard pivot in marketing the Star Wars brand. They'll say something along the lines of "We want to bring the magic of a Galaxy Far Far Away to new and diverse audiences". But that's corporate for "We want to double our target demographic by making the brand appealing to girls."
Part of this pivot is the obvious inclusion and elevation of female characters (Rey, Jyn, Sabine, Iden, Rose, Kira) and including girls in product commercials.
A less obvious part is shedding the image of Star Wars as being the domain of autistic boys fussing over the details of the universe and technology. This is done more subtly: decanonizing the EU, redefining the nature of the Force, and diminishing the importance of the OT and PT.

Trying to attract new (casual) fans to an established franchise can be challenging and Disney doesn't want their new female demographic put off by a backlog of games and books because:
A) that media is already in circulation.
B) that much lore presents a steep learning curve to new fans.

It's not fun to be constantly corrected by "Well, Actually..." or to have your nerd cred measured based on encyclopedic knowledge of obscure facts from the Expanded Universe.
So Disney solved this challenge by negating and replacing the EU. Now when a nu-fan is confronted by an obscure fact

This levels the playing field. Signaling a high level of fandom today simply requires buying into the latest line of merchandise or keeping up to date on the latest trickle of hints and sneak peaks carefully released by the studio.

Because the EU went to shit during the New Jedi Order and only got worse after, it was irredeemable by the time Disney bought it, best to cut the whole thing out and pick and choose stuff you like to put back in which is what they've been doing

Kathleen Kennedy, Bob Iger, JJ Abrams, and Kiri Hart have nothing but mocking contempt for the hardcore fans of Star Wars. Consider this:

other than money, the rebranding star wars to gain girl demography never made sense. One of the original main reasons Disney bought Star wars was to regain the boys audiences since they were losing the boys demography and were being seen as a "the company who cater to girls" thanks to the Disney princess branding.
