The "robots" are really just advanced humans. Joi offers guaranteed love, it's not hard to see why a character like K would want the easy route instead of the stress and hassle of a real relationship.

There's no real reason she couldn't have some kind of robot body other than purely thematic, the whole point of her character is to exemplify the fantasy. Nothing about her is realistic in any way.
