Season 1 Gravity Falls rivaled Golden Age Simpsons in terms of humor. The adventure and mystery was just a bonus. Even without having to compare the show to anything else, GF was still on top.
Steven Universe has yet to have anything of top tier quality. The only way for the show to be considered good is for you to say, "Well, it's the best thing on CN right now". Even what the fans consider the best episode to be, Jailbreak, has an awkward, poorly animated dance-fight at the end that everyone laughs at.
GF wins by a mile, even if it fell hard, it had an amazing start. SU has just been lackluster the entire way.

Could've had a funny little adventure where Ronaldo jumps on the warp pad last minute and forces himself to join Steven and the Gems on a mission. Could've seen him bumbling while fighting monsters and being a total embarrassment in front of the Gems. Probably something happens that gets him and Steven separated from the Gems and now Steven has to play babysitter to an adult, maybe make a comment of, "Wow, was this what I was like during my first missions?".

Gravity Falls felt really off in 2B, especially with that conclusion. It had great potential with its twist and hidden lore and all that, but then it got really dumb in the end.

Gravity Falls used it's """"""""lore""""""""" and """""""""overarching plot""""""""" as a means of creating hype. It was Hirsch and Disney's way of separating the show from the rest of XD's line up. The "lore" was never ever planned to be anything more than a publicity stunt to get people invested in the world. That's why wrapping it all up was not only left until the last minute, but it was done poorly - there was nothing to wrap up. When I remember what I love about the show, it wasn't the hidden message bullshit, it was the funny writing and comfy atmosphere.
The ending was shit because it tried to conclude something that couldn't be concluded.
Steven Universe has the exact opposite problem. The lore is genuinely interesting, but it starves the viewer by constantly starting things you know it won't finish. It promises all these secrets to unfold, and while Gravity Falls didn't actually have any secrets, Steven Universe treats everything teased at you as something genuinely important to the story, then casts it aside. The cast and world (outside of the Crystal Gems themselves) just AREN'T INTERESTING ENOUGH to keep the show afloat while the audience waits for all their questions to be answered.
