That Eustace was unloved by his family, only had a barren farm to show for his decades of living, and directed that anger on Courage because he saw himself in him.

eustuce was a huge jackass but still not as bad and his mom and brother was cursed to have it rain on him till he did a single act of kindness. courage tried to get him to see that the rain cloud curse was real because it was flooding nowhere and the house. the mirror broke and eustice having half assed lost his mind from denial saw courage as presumably himself as a child and gave him his hat because the imaginary boy was bald and suffering sun burns from not having a hat.

Or Eustace was a relatively nice guy at first but something traumatic happened to the couple, probably related to them failing to have a kid Eustace craved so much if only to give his child a better life than him family had given him. He proved to be a failure even at having his own family and then he turned into what he see today.

Eustace is a grumpy old coot to damn near everyone EXCEPT Muriel. While he can be a jerk to her as well, she's the only one who has ever seen his sensitive, loving side (as evidenced by the MacPhearson Phantom episode, where Eustace is genuinely distraught at the thought that Muriel might be mad at him, and is openly kind and sweet to her after Courage's "counselling" session). Muriel, on the other hand, might not seem like the smartest old lady in the world, but she knows enough about Eustace's childhood and his overall bitterness that she's willing to look past all of that and stay with him (though she's certainly not above hitting him with a rolling pin if he's being TOO much of a jerk).

Well, he's related to a demi-lich Chinese empress who at one point tries to steal Muriel's bones.

Probably neither. Judging by those 2 personalities they get babied by Muriel but do their own thing while Eustace hates that theyre a city kid. This episode always gave me really uncomfortable, molesty feelings. I know it was supposed to, but seriously.
