A few episodes humanized her so she wasn't that idealized for Doug. Doug accidentally making her old house collapse for one.
Showing her angry and vulnerable made all the difference between the initial 100% can't have flaws vision and someone he could actually help.

High school romances are a thing from the times when people mostly stayed put and didn't have tools to see that an entire world existed outside their towns or cities.
Sometimes they work, but most of the time they don't.
Hell, Patti was Doug's saving grace as a new kid in town. Imagine them getting into a real relationship and then, like all relationships, something goes wrong. So he moves out of town.

Personally, I always found it telling that with the exception of the Pizza/"I don't know how to cook, Doug! D:" episode and the Girls Can't Play Baseball episode (in which Doug was mostly just a witness to her owning every fucking dude in school at the sport,) all of the Patti/Doug eps on the nicktoons Doug ended with him screwing up something with her:
