There's this one particular type from Istria, called "pljukanci", which is easily made by hand. You take a pinch of dough and roll it between your palms.

Goes superb with mushrooms and prosciutto, or cheese sauces.

Freshly made gnocchi is the best. I had it once in some small town in Pennsylvania on a cross-country road trip. Also, its not just how you cooke the pasta, but how you let it finish cooking in sauce. It has to have olive oil or butter for the sauce to stick to the pasta.
