The 90's seemed pretty progressive about that. Aside Jewish representation in Hey Arnold and Rugrats there were episodes about Hindus and Buddhists in the Simpsons, the Simpsons themselves attendees of their local church. King of the Hill also had some religion focused episodes.

I can't think of many modern cartoons that have things like a Passover special or a whole episode dedicated to a character spending time with a very religious individual that isn't full mockery.

It seems most shows avoid that because it's become a point of contention. Outrage culture would get pissed off because either "they didn't represent the religion correctly," "why that religion and not a different one," and of course, "REEEEEEEE RELIGION IS EVIL."

You can't win, so they decide to ignore it entirely now.

King of the Hill touched on a lot of subjects that I don't see any cartoon, both kid and adult, every touching upon. Like the one where Connie gets rejected from some top tier school because they accept too many Asians and had to balance out their demographics. The bible is many books put together for one. The reason there are so many interpretations of the bible is thanks to not everyone knowing Hebrew and Greek. Also Martin Luther basically giving bibles to everyone. Did you know that the bible was meant to be a holy tool for clergy only? The damage is done now, so everyone can read and interpret for themselves, but this in a way strengthens the church for they have correct interpretations and don't bother with politics.
