You know the death of Palpatine didn't really change anything, he was only one man. Even the restoration of the Republic didn't change anything, it doesn't matter rather the government is called the republic or the empire. What changed everything was the military disarmament act which happened off screen.
So the New Republic has all these star destroyers inherited from the empire and stormtroopers and it just decides to get rid of them? And the people are okay with that not to mention the military people themselves? The New Republic now despite being the legitimate government now thinks it could do with just shitty X-Wings that a ragtag group of rebels used to have and the same with the Resistance, because they want to completely rehash the rebels vs empire plot.

The answer is this- everytime this is brought up we go back and forth until you end up with "well the Jedi should have been shown asking more questions on screen", because even if they were, NOTHING changes about the plot. They need the clones. Period. The clones are suspicious, but it's highly unlikely that Dooku has anything to do with them because his droid army is big enough that the "Jedi will be overwhelmed" and he's clearly gearing up for war. It would make no logical sense for him to not just use the droid army for whatever his nefarious goal may be.
And as for why Yoda calls it the Clone War- it's because that is the scene that shows that Yoda is very wary of this army and realizes that they are between a rock and a hard place. He calls it the clone war because the clones are the new and uncertain elemment- everything else was already in play. Dooku, the Trade Fed, the Seps. The clones and their mystery are what kick off the war.
