I would say there are two major reasons why this trope is almost universally loved

1) The comic relief character is usually the most likable character therefore when that character turns out to be really strong, it just adds on to them

2) The show of strength is probably a one-off thing or a rare occasion in the series like when King Bumi flexed on Aang so the writers can go all out when they normally can't at all times. Everyone loves someone fucking things up ala OPM
