From a novel standpoint I think the trend of standalone tie-ins denies a good amount of freedom when it comes to developing more creatively risky stories and characters. I'm not saying that every story needs to have a bunch of continuity and background knowledge to jump into, but Lucasfilm is putting out a lot of books that can be picked up with zero prior knowledge outside of film and animation, which makes it harder to develop the deeper narratives that take time to develop. Instead of a series (For the most part), authors for the most part get one shot when it comes to creating and creatively maturing plots, characters, and other elements beyond the direct supporting scope of the novel.
Beyond that, because these books are tie-ins, these supporting characters, plots, and worlds have limited room to exist in and of themselves. The result of this a stunted ability to creatively branch out because they're most important relationship is often to service the tie-in subject.
By being in-part reversed engineered to synergize with character portrayals in film or TV, there's also less room to creatively maneuver when it comes to these major characters that are being written for, because all of the meaningful character beats are ostensibly being saved for the tentpole mediums. Books are being written to support, not to create, character and story defining moments.
Visually lot of the design elements in the ST have also been lacking for me, but that's not really a unique take.
