Communism is the next stage of humanity following the capitalist stage.

What exactly is communism according to Marxist-Leninists:

Not that I'm gonna go into the far far direction of this, but I've always been relatively in the middle maybe somewhat left but able to find some agreements with the lesser crazy right like libertarians and still can. But this past election has really pushed me a tad more in the left direction in supporting seeing how much crazy the right has gotten. It's almost like the opposite of the so called "red pill" meme. I don't think we need total crazy socialism , we need it more like how bernie sanders wants it and how Scandinavian countries have it. A fair balance between giving some people some government support (healthcare, education etc) while still having capitalism that's kept it check as to not go wild in either direction. Radicalism in either direction has never worked for the world. Didn't work crazy right/fascist states in the early 20th and crazy communism in most places by the end of the 20th fell apart as well (save for what... north korea?) even China isn't completely communist economically anymore.

Some of these are really just small shops that pull together so they have a brand people can rely on and trust.
There are some but it works better when people are idealistic and / or friends, and even then it can destroy the friendship in the first place

How is it possible for the collective to even seize the means of production in the first place if it has not yet collectivized? Only an extremely orderly force could do this, which means the only way to achieve your idea of "true communism" is to first go through the "state capitalist" phase you describe. How can you guarantee a peaceful (or even any at all) transition of the means of production from the state to the workers?
