Because the New Testament is the part when Jesus was born, died, ascended to heave and started to spread Christianity by the Apostles execpt for Judas .

So basically a lot of people see the old testament as more of a history book. There is a quote from Jesus

"Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them." -- Mathew 5:17

That a lot of people take as Jesus saying, you don't have to do all that stupid bullshit anymore because I'm fulfilling the covenant Abraham made with God.

Also a lot of theologians believe that most old testament laws were put in place by elders just to make society function. (IE they knew eating shellfish made people sick sometimes, so they banned it to keep people safe and called it Gods law)

It does count. However God changed some things. This was because the sacrifice of Jesus changed things. However only God is fit to change the rules because he wrote them, the pope can't say different. The only things that don't apply in the Old Testament were the things that changed. We can eat seafood now. Why? Not because God's word isn't perfect, but because God can change it because he is God and he can do anything. So why doesn't he just get rid of all the rules people don't like? Because those rules are there for a good reason and just cause you don't like them it doesn't overrule the word of God. Not even the pope had that power. Only God can change it. We can only try to translate and interpret it to be closer to what God really wants. We can't try to make it what we want it to be because then it wouldn't be the true word of God and we might aswell be Muslims. Anyone who says they think the law should change to fit the world is an idiot. The world must change to fit God's will. The only time the word can change is when God sees it as nesscary, not when humans don't feel like following it. Those who think the Old Testament isn't important are stupid hippies who think God should be a pacifist. Even in the New Testament Jesus showed that sometimes you have to fight to protect what you care about, or else bad people will take it from you. Pacifism doesn't stop the suffering, it only doesn't cause suffering itself. If we truly want to end the bad stuff we need to stop the bad people from doing it. And sometimes the only way to stop them is to fight them.
