I beleive Hitler underestimated both Britains ability to bring the US into war whilst Hitler stalled for a peace treaty, and the success the Soviets had in industrialising and mass producing armaments to defend the nation. Remember Germany reached a friendly detente just before 1939 with Russia against Britain. Hitler bet on the wrong moves. I doubt he hated Slavs, most of his race nonsense was a means of unifying Germany to his cause and boosting their morale to have the will to fight. my two cents is that they planned to colonise the poles and russians rather than wipe them out completely (though many would have been displaced as part of the lebensraum conditions, and apartheid-like conditions would have prevailed due to their anti-race mixing policy). as OP rightly says, hitler believed that 'lesser races' could thrive under germanic leadership, and as we know, the nazis believed in the improvement of races via eugenics. the german persecution of the polish intelligentsia indicates that they wanted to root out polish leadership and replace it with german leadership. after that, they probably would have implemented eugenics programs for the conquered peoples, similar to those that they had in germany.
