That's because you've eaten pork cooked by a shitty chef. You can't treat it just like a beef roast. It is generally leaner and isn't "marbled" with fat running through the meat. Rather, a pig's fat is stored in a layer outside the muscle.

Get a pork shoulder and cook it at a lower temperature than you'd cook a beef roast for a long time. Don't trim off the layer of fat that will be on one side of the meat. Place the pork in the roasting pan with the fat side up, so as it cooks the fat will render and drip down into the meat, essentially basting it automatically and keeping it moist and flavorful.

While I do love some sausage or bacon Pork is pleb tier meat along with Turkey.

The meat feels more granular than, say, a quality cut of beef. It's not about how the meat is cooked as much as it is about the cut. I've had decent pork chops and pork based sausage.

over here we usually only eat roasted lamb. first time i ate a lamb steak two years ago i almost wept it was so good.
