Even if OP was a Master chef, be would still have to work for a low wage at such an establishment because Jose meets the requirements for pennies compared to OP. This basically means it is functionally impossible for OP to be a chef there with illegals being hired.

I did it several times, they'd send ICE in and interview the staff. If they are illegal and you know it, tell them they may have forged papers. Makes the agents look a little harder imo...that being said, I only saw them haul two guys and a woman away. But.. three others just stopped showing up after the first time and two left after the second. So win-win either way. I did it because they were disgusting and rude, not because I wanted their position.
