And her dissertation is something an undergrad could produce. I'm not exaggerating in the slightest. A white or asian man would never have graduated with that thesis, and any professional mathematician who even skimmed her dissertation would agree.

Math is unlike most other subjects in that nobodies can't really advance the field. Someone who doesn't know shit about chemistry could luck into some new understanding through a physical experiment. Randos discover new species of animals in the back yards all the time. Someone who's smart and dedicated can drop out of high school, teach themselves programming, and develop some software that changes the world.
But that doesn't really happen with math, because you basically only learn mathematics from mathematicians. And a mathematician is only going to teach you if you're a grad student in their school. The reason Ramanujan is such a well known story is because of how incredibly goddamn rare such a thing is. And it was much easier to do that kind of thing 100 years ago than now, because over time, the simpler problems are all being gobbled up by grad student dissertations.
Pretty much the only non-PhD people "doing math" are cranks, circle squarers and the like.

I'm a social scientist (lol), all my work is in stats but I had no clue what the fuck I am looking at in her thesis when she pauses for a second in between vignettes about how oppressed she is to actually try to state an equation.

The other problem, which you don't seem to understand, is that math has no self-check. The program is the programmer's check. The experiment is the (physical) chemist's self-check. A mathematical argument is only understood by other mathematicians. It takes about a decade of study and correction from an expert before someone can produce a novel problem and solve it correctly.
Computing and engineering are the fields most open to outsiders today. Your theory crafting about how math is open doesn't hold up to scrutiny. Randos outside the academy produce new understanding in pretty much every STEM field all the time EXCEPT for mathematics.
