I looked into doing one at the age of 25 and was soundly rejected from pretty much every available apprenticeship.
The quickest way to tell they want someone young but are claiming 'mature aged' is when they specify you are required to have completed the pre-apprenticeship.
Like any adult who is working full-time can just stop their job and do a full-time pre-apprenticeship.
