There is actually some debate about this within Hinduism. Many suggest Hinduism is a non-missionary religion, but it is a diverse faith and there ARE Hindu missionaries, and of course people have converted in the past and been accepted. There's also no obvious theological reason why you cannot convert, not like with the Mandeans or Parsis. I suspect the main reason they don't is that it was strictly forbidden under Islamic domination, same reason you can't convert to Iranian Zoroastrianism.
