Availability of materials and different climate are pretty good explanation.
Here in the north you don't have soft stones like sandstone that can be easily worked upon, pretty much only stuff available is granite which can't be easily shaped.
Other factor is that in the winters dwellings made out of rock like castles are absolutely miserable because there is no way you can burn enough wood to keep them warm and then water condences on the cold inside walls making the castle both cold and damp during winter season.
