you serious? "vikings" (norsemen in general, not only viking raiders) were amongst the scientifically most advanced people of their time, they just didn't need to compensate for their small brains by building huge stacks of stone.
They had (wooden) water piping in their towns and villages, navigational tools that worked based on the assumption that the earth had to be round (sun-gem, not sure if that's the proper translation though), steel on a level that was considered almost impossible (and thus believed to be the result of using special, metoritic ores), including nitrous hardening, something only germans and nordics used until the 20th century. They also were the farthest traveling people of the time, trading with america, india (indian buddha statues found in birka) and african countries.
The only thing were they might have been a bit behind is medicine, here the arabs might have been better. As, however, the vikings didn't write down what they knew, there's no sure way of knowing if that's true - it is possible that the christian chroniclers simply didn't know about everything.

Availability of materials and different climate are pretty good explanation.
Here in the north you don't have soft stones like sandstone that can be easily worked upon, pretty much only stuff available is granite which can't be easily shaped.
Other factor is that in the winters dwellings made out of rock like castles are absolutely miserable because there is no way you can burn enough wood to keep them warm and then water condences on the cold inside walls making the castle both cold and damp during winter season.
