Thinking about it, it seems like they cover each-others weakness against servants pretty well. Shirou uses the bag of tricks and his overall much higher effective range via traced weapons to provide cover for Shiki, who can then get up close to stab their lines (a level of pure power that Shirou couldn't possibly reach)

Except for the part where they would probably never want to work together, I think it's a pretty solid theory.

It's their max MP stat. Think like in FFIV where Tellah had 90 MP but Meteor cost 99 so the stress killed him when he used it. Difference is everyone except Saber could regen over time. Pretty simple, really.

one of my big problems with fate is that it has the silly rpg stats that sound stupid as hell, only they don't actually go into any detail about them and more or less constantly ignore the stats so shirou can manhandle gilgamesh somehow even though he's apparently like 100 times stronger than a regular human according to his rpg stats

Shirou can only cover those weaknesses for a short amount of time. Unless he has UBW up, then he's stuck in short range. Anything that isn't a sword costs extra for him trace, so a bow or any other long range weapons would be out of the question without outside prana support, like what he had from Rin in the UBW route. Unless they can kill a servant in the short amount of time that UBW is active, then they're fucked. Servants are just simply too above human levels of physical and magical performance. It's noted that UBW spam is only a mere annoyance to a servant who has mastered their own weapon. They'd just dodge or deflect until the spam ends. Only a servant like an assassin or caster would likely have trouble, other classes works would probably outlast them both.

It's not that Assassin wasn't hurt, the damage was just negligible. As long as the two spiritual cores are unharmed a Servant can take anything less than getting chopped in half in a stride (provided the damage can be healed and doesn't directly attack the soul or have some curse applied). With better weapons and strikes to either the head or heart, Kirei and Kiritsugu could technically kill Servants

Kirei had a bunch of extra CSs, that's all. They didn't change anything in the story but they did prompt secondaries to go full frodo with why Kirei didn't use those CSs to continue controlling Lancer rather than have him suicide.

Answers to these are no. Only things with mana/magic can damage a servant. A butter knife infused with mana can hurt a servant, a nuclear bomb cannot.

While stats on their own are not all that useful I find that comparatively between servants they do in fact give a good summary of how they all compare. It's also an easy way to show how a servant becomes stronger due to mana source, like Saber between Shirou and Rin.

He has the potential, but that would require him to actually train in it. He lacks a magic crest, which is what Rin used to give support to Shirou. He can't make the same connection to Shirou that Rin did.
