So that means OnAir 1-26, DC21-24 or Death and Rebirth, then End of Evangelion. You can skip the later movies, because they're just a fanfic.

Ignore the TV series and just watch the Rebuilds--1.11, 2.22 and 3.33. Not only are the first two movies a faithful retelling of the anime's plot, they're visually superior as well. YMMV on 3.33, as it's a very polarizing movie among Evangelion fans.

Read Re-Take first. It's the official Evangelion doujin approved as canon by Anno himself. Then you watch the original tv show, however, you must skip certain episodes: 7, 10, and 24.

Then watch Death and Rebirth, skip EoE and move on to RahXephon, the official AU Evangelion series. After that you move on to Rebuild, but you are only allowed to watch 1.11 and 3.33. After that you can watch EoE and THEN 2.22.

It's the fact that Gainax infamously ran out of money before they finished Eva and the egregious ending that make Evafags either tell people not to watch it or turns off people who research Eva before they watch it.

Coupled with the fact that 1.11 is skippable and 2.22 is ReixShinji pandring along with 3.33 being 75% fujoshit (despite being objectively the best rebuild) that people want to pick and choose what they watch.
