The actuality of it is that Amish certainly do pollute because of their old style farming techniques, but the levels of pollution they create are less than modern industrial farm and ranching activities.
The Amish, on environmentalism, fall into 2 categories.
A) they don't particularly care about preserving nature but do so anyways because their spendthrift ways lead them that conclusion naturally (if I chop down all the trees around me irresponsibly I will not be able to sell/use firewood. If I poison my wells, I can not draw water.)
B) they believe they must protect nature because it's a divine creation bestowed upon us by God (Everything is the work of God, therefore everything is sacred. To pillage the Earth is sacrilegious).
They've shown great willingness to comply with EPA and environmental laws for those reasons.
