Enkidu is only strong against the divine and even then it's possible to break it. Shirou being regular human could probably just cut it down with UBW swordrain or K&B.

Enkidu becomes more powerful depending on how divine a person its used on is.

For instance, Berserker is a demi-god, so it works real well.

Shirou does learn to use guns when he goes out to be a mercenary (Archer in Extra is shown to own a lot of guns). It's just, you know, kind of hard for a kid in Japan to be packing a particularly large amount of heat.

Even a Caster class servant should be able many times faster and stronger than every human could ever be, even with reinforcement.

The whole fight was based around Shirou being capable to pull swords fast enough because UBW created them automatically, they were already ready to be shoot at any time.

Type Moon is about situations and scenarios. Dumbasses only can remember all the cool and flashy attacks and ridiculous abilities, but those aren't what decide most fights. The situation and scenario determine how the fight is going to end. Assassin is a piss weak servant, both Fake and True but they are shown to hand Saber her ass multiple times. Should they be able to do this 9 out of 10 times, fuck no, they should rightly get blown the fuck away but they still trash Saber.

She was ordered to let Rin go through, and kill the rest who tries to pass through, with a clause that capturing Shirou would be cool too. Obviously she went full serious at the end of the fight. Face it Saber Alter lost 1v1 in a swordsfight against a half dead Shirou with a magic arm that was trying to kill him.

So why was that Japanese guy able to beat up Saber?

It is really just because she was caught off guard. Normally his attacks would just be a shit but his assassin skills combined with Caster's augment got her off guard.

he was buffed by caster and his fighting style is obscure so it was hard for saber to fight against it.
