I enjoyed Zero and recently tried to watch Stay Night, but I got about halfway through it and dropped it because it's fucking terrible (boring as hell). I'm told UBW is better and I'm thinking of picking that up.

Yes reading the VN is the best way to start the series(original(with sex) or realta nua(no sex)) would be fine but I prefer the original cuz ya know no censorship.

If you want to know if you like the universe first, watch the Fate/Zero anime, which is a prequel.

The original Fate anime is not bad. People meme is up hard as being shit, but the only really shit thing DEEN did was the UBW movie. Granted, the 2006 anime isn't really on the level of what Ufotable does, but if you go in with the expectations of it being a middling budget show from 2006, and you'll probably not hate it. It's like a 6/10.

Plus, you need the Fate story. You're not gonna enjoy Empire Strikes Back if you don't watch A New Hope.

Of course you can always read the VN, but if you want to watch an anime adaptation, the 06 series is essential.

It told the story of the Fate route reasonably well. Did it have some weird moments where it tried to merge in stuff from UBW and HF? Yeah. Was it particularly flashy or well animated? No.

Was it Tsukihime 2.0? Fuck no. just plug your nose through the episodes with Caster and you'll be fine.

The movie? Yeah, but I'd say the 06 was definitely several steps down from the 14 series.

Course though it had a lot going against it. Smaller budget, had to deal with selling not just the Fate route, but the whole VN. I won't say though it's a spectacular job. Its strengths lies in the fact that it is FSN, and FSN to a lot of people is an enjoyable story.

The 14 series was crazy drawn out and boring, and had this habit of sucking life out of the characters the way Tsukihime did.

I disagree? UBW was slower paced, considering this series came out after a movie that tired to cram it all in 105 minutes, I think that's welcome.

I'm not sure how you can say the 06 is less boring, considering even with the added material there isn't a whole lot of action, and what's there isn't that well animated.

I like the 06 series for what it is, don't get me wrong, and it's definitely essential for understanding the story of Fate as a whole, but I'd never really watch it for anything past the story level. UBW has a level of very enjoyable visual merit beyond the narrative.
