I very much doubt they would write in an immortality potion. If anything, I expect Holo to shorten her own lifespan so that she won't have to live much longer than Lawrence.
I would guess that some magic shit happens with the wheat that her soul resides in. They keep bringing up the fact that if the wheat she keeps around her neck is destroyed she would disappear. Kept expecting that to be a plotpoint while reading the books, thinking some antagonist will get hold of the wheat and threaten to kill her or something but it never happened.
For instance, maybe Lawrence receives a fatal wound in an accident and then Holo feeds him the wheat to magically heal him but that means that she can only live as long as Lawrence does because now they are 'joined as one' or some shit.
Basically just month until release. I think that we will not need to wait too long.

Yep. It is unreasonable to demand that she dies with him, he wouldn't want that. A couple don't always die together and it is not necessarily a good thing that they do. They have a daughter and potentially, future descendents, and it is best that Horo is there to watch over them as the eternal matriarch.
