Guys, I just had a wild idea. And call me crazy but I think I might be on to something here.

I think the coordinate's responsibility is to turn all titans into fertilizer, so Eren will "kill" all the titans but life will grow from their bodies.
We saw this evidence in the anime, after Eren partially transformed and Armin noticed there was a flower there that wasn't before. But what would be the purpose having to grow plants? The world outside the walls is in complete shambles. All Armin wants to do is see the ocean, and Eren also wants this. And beautiful fields of sand and snow. But what if the earth outside the 4th wall isn't like this at all? It probably is, considering Uri said the world will be ending soon. But, Eren has the coordinate, so there is still hope.

We know Isayama borrows a lot from norse mythology. So what we're seeing right now is the events of Ragnarok. And Eren, with the coordinate will "sacrifice" (crystallize) himself and bring forth the new earth. But just like Ragnarok, everyone but 2 people will survive.
And who is strong enough to survive Ragnarok? Levi and Mikasa.

LM will repopulate the earth together like Lif and Lifthrasir after the events of Ragnarok.

In the new guidebook, Isayama confirmed that Ackermans find a boss/liege they deem more important than themselves and devote to their cause. And I think this is the reason Isayama made LM so distantly related. LM will teach their children to protect the earth, so the earth itself will literally be the next Ackerman generation's boss/liege. This mindset will pass down every generation thereafter.
So when Eren wakes up 2000 years later, the once apocalyptic world will have turned into an absolute paradise fertile with rain forests, trees, flowers, plants, and yes, oceans. And the Ackerman tribe will be the guardians of this new earth; they will be an indigenous peoples just like the Na'vi from Avatar.

Armin won't never knew who was his father/grandfather so it won't help anything to the plot. Uri is too old to be his father, maybe his grandfather but still it will put him in a even more distant relationship with the Reiss than Historia. I don't this will happen.
